History
Our story begins in the mid-1800s with the soudjouk-making business started by our great-grandfather, Butcher Ahmet, in his small workshop. After Butcher Ahmet was martyred in the Balkan War, his son, Butcher Kara Mehmet, continued the tradition. In 1920, the business, which continued its operations in Afyonkarahisar, began to be called "Cumhuriyet Kasabı" (Republic Butcher), inspired by the proclamation of the Republic.
Having quickly gained popularity with its soudjouks made only from meat and natural spices, Cumhuriyet Butcher Shop became one of the symbols of Afyonkarahisar. Kara Mehmet's sons, Ahmet and Ömer Kocaşaban , expanded the brand, making the name Kara Mehmet Sons Cumhuriyet Soudjouks known throughout Turkey.

With his knowledge and hard work, he inspired the people of Afyon. His vision not only grew our brand but also Afyon itself. He brought Cumhuriyet Sucukları to tables across Turkey. In front of our shop in the Hal Bazaar stands Ömer Kocaşaban , a master craftsman who symbolizes labor, knowledge, and production, who contributed to the development of his region, and who is devoted to his profession .
1970
In Afyonkarahisar in the 1970s, production in this shop would begin before sunrise. Butcher Ahmet Kocaşaban , Ömer Kocaşaban , and their team meticulously continued the tradition they inherited from their grandfathers. All the equipment used in those years is now preserved in the Sucuk Museum. This photograph symbolizes our brand's steady journey from the past to the present.
1980
This is Cumhuriyet Sucukları's first integrated production facility. With its slaughterhouse and the production of sucuk (Turkish soudjouk), pastırma (cured meat), and kavurma (roasted meat), the foundations of our brand were laid here. This journey, born from a small workshop, has transformed into a legacy of flavor spreading throughout Turkey. Our first production facilities are still a source of inspiration for us today.
